素滷飯

紫菜糯米糕

碗粿

 

材料:

1.再來米粉                                                         1

3.澄粉                                                                                 3湯匙

4.菜莆(蘿蔔乾)                                      半包    切碎

5.香菇                                                                                 10       切丁

6.豆乾                                                                                 1         切丁

7.Ham                                                             適量        切丁(隨個人喜歡)

 

調味料:

五香粉                                                                1茶匙

八角粉                                                                1茶匙

醬油膏或素蠔油                                    3湯匙

白胡椒粉                                                            1茶匙

 

作法:

4-7炒香加調味料,備用

1-3混合後,在爐上加熱(中火),攪拌到半透明狀後熄火,倒入模型上面鋪上炒香的料上蒸籠蒸30分鐘即可,亦可用電鍋蒸,外鍋放1 1/2杯水。


 

 

素滷飯      

嗯!人間美味,簡單、營養又好吃

 

材料:

3-4                                                       香菇

4oz                                                              素肉末

1茶匙                                                         香椿醬或新鮮香椿切碎爆香

5                                                             糙米飯或白飯

5                                                             漬蘿蔔

 

調味料:

2茶匙                                                                 橄欖油

21/2茶匙                                                醬油

少許                                                                   

少許                                                                    冰糖

少許                                                                    胡椒

 

 

作法:

香菇、素肉末分別泡水,約一小時後歷乾切丁備用。

先放橄欖油燒熱加入香菇丁炒香,再加入素肉末約炒乾水分後加入香椿醬翻炒數下後,加入醬油、冰糖、水約煮十分鐘即可關火。喜歡吃重口味的可加素沙茶醬。

 

糙米飯澆上素肉燥醬再加上一片黃蘿蔔,亦可以拌麵吃。


 

 

紫菜糯米糕

 

材料

長糯米                                                    3半斤(300)

糯米粉                                                    100

在來米粉                                                60

                                                                        1.5

紫菜                                                                    4

鹽、沙拉油各少許

 

 

作法

1.              糯米洗淨,浸泡4小時後,瀝乾水分

2.              紫菜剝成小片,放入1.5碗約水中泡軟,再加入其它各料混合拌勻。

3.              淺盤中鋪上玻璃紙,將作法2料倒入,放入蒸鍋中蒸50分鐘。

4.              待涼後敢出切塊,沾甜辣醬、香菜、花生粉食用

 

 

此處的紫菜指的是市面上包壽司專用的海苔。


 

 

蒿麥涼麵

 

8 oz                                                         甜豆,去頭尾

12 oz                                                       蒿麥麵

1湯匙+1 茶匙                                        麻油

1湯匙+1 茶匙                                        橄欖油或花生油

2 中型紅蘿蔔約1/2磅去皮後削成長條

1茶匙薑末

1湯匙醬油

1/4杯切碎薄荷葉

少許胡椒粉

 

作法:

1.              準備冰水約半盆

8 quart煮開加鹽加入甜豆燙熟約2分鐘,撈起放入冰水中完全冷卻後撈起,水煮滾放入蕎麥麵照蕎麥麵說明書將麵煮熟撈起放入冰水中完全冷卻後撈起。

2.將麵放入大碗中,拌入麻油、橄欖油拌勻,加入甜豆、紅蘿蔔、薑末、醬油、薄荷葉和胡椒粉充分拌勻即可。
